Purity Law" or the "Bavarian Purity Law", is a regulation concerning the production of beer in the Holy Roman Empire and its successor state, Germany.

In the original text, the only ingredients to be used in the production of beer are water, barley and hops.

This historical Poster is the oldest known depiction of a Franconian brewer. It was puplished in 1425 in a series of "household books" issued by the Nuremberg Twelve Brothers Foundation. The picture shows Brewer Herttel using a long pole to stir the mash, which is being heated in a two-handled kettle over a brick fireplace. Suspended above the brewer is a six-pointed star composed of two interwoven triangles.

Gambrinus is perhaps best known for being the main character in a truly bizarre history of Bavaria.

The Historical King of Beer?
There is another explanation for the legendary Gambrinus as the inventor of beer. According to it, Gambrinus actually lived, not as a king, but as a real, thirteenth-century duke, who, in spite of Aventinus' fanciful annals, lived in what is now Belgium, not Bavaria. This medieval aristocrat, however, was neither the first brewer nor the inventor of beer. His subjects never called him the "King of Beer". Yet, there is an odd twist to this historical fellow's story that turns him not into the inventor of all beer, but perhaps into the nilly-willy midwife of one particular beer style that still ranks among the world's greatest.

The Christmas drawing from the Weyermann® archives for the year 2002 depicts the first drum roaster in the new plant at 17 Brennerstgrasse following the move from Laurenzistrasse, where it all began.
These roasting machines, state-of-the-art in their day, were deployed in the first biulding alongside the railway line.
In all, 12 roasting machines worked day and night to keep up with demand.

This illustration from the architectural and engineering archives of the Weyermann® family depicts an improved steeping tank design which allowed aeration of the barley and removal of carbon dioxin. The tanks were installed in 1903 and remained in use until replaced in 1960.

On the occasion of Weyermann® Malt 125th anniversary, an engraving from the Weyermann® Archives reminds us of the firm's founder Johann Baptist Weyermann.
He had already begun with the attainment of his vision in 1896: a pneumatic malthouse, which he was certainly only able to realize in 1903. This engraving still shows the building as a classic malthouse of three-stories with a threshing floor, a barley granary on wooden flooring with a centrally arranged soaking house and a triple-racked drying kiln: this was revolutionary in an era when most of the malthouses could only work for 6 months of the year in rock cellars.

In 1903 company founder, Johann Baptist Weyermann, after thorough comparison of all malting systems available at the time, decided on the construction of the pneumatic Malthouse - the Galland System.
Compared with the conventional floor malting house, the drum malting house offered an enormous saving on space together with crucial quality improvements through precise airation and conditioning (cooling and humidity control).
